Family Recipe: Fran Stokarski’s Lazy Pierogi

Growing up in the 413, holidays meals always meant a big heaping plateful of my Aunt Fran's lazy pierogi. It was the one dish that was sure to be on the table for every single holiday meal. We all loved it and looked forward to eating more of it than we should.

 My Aunt Fran passed a couple of years ago. She was a remarkable woman and someone very special to me. She lived almost her entire life in the same house on Sugarloaf Street in South Deerfield and worked for many years in the Town Clerk’s office. She was a true lifelong resident of the 413. So, I'm sharing her recipe here in fond memory of her and in hopes that others will make it and enjoy it as much as my family did.

Aunt Fran’s Lazy Pierogi

              Ingredients:

24 oz. package wide egg noodles

27 oz. can sauerkraut (rinse with cold water and drain)

A large can of mushrooms (drained)

1 package onion soup mix

4 sticks of butter

Salt and pepper to taste

Preparation:

Boil egg noodles according to package instructions, then drain and set aside. Add one stick of butter to skillet pan. Add sauerkraut and saute over medium heat for 10-15 minutes. Add mushrooms and saute for 5 minutes more, adding more butter if needed.

Spray inside of crockpot with cooking spray. Add noodles, sauerkraut/mushrooms, and onion soup packet. Add salt and pepper to taste.

Add three sticks of melted butter and mix thoroughly. Turn crockpot on low and cook for one hour. Then turn crockpot to warm for another hour. The longer it sits, the better it tastes.

Serve in generous helpings. Goes great with Pekarski’s Keilbasa!
